I'm looking at using a golf app with my iwatch and see it's needs to be paired with my iphone to transfer yardages to the iwatch. What distance will the watch and phone stay paired?

To clarify: your Apple Watch and iPhone remain "paired" until you unpair them.
Whilst remaining paired, they may become disconnected from time to time, such as when they are taken out of Bluetooth range of each other.
When disconnected via Bluetooth, your Apple Watch and iPhone can still connect via Wi-Fi, subject to Wi-Fi being available on a golf course - but an app may not provide functionality across that connection.

I understand what you're saying. Remember I'm looking at a golf app to use while playing golf on a course outside so there's no WiFi. I'm trying to get a feel for how far I can walk away from the iPhone to hit a ball and still have connection between the 2 devices

Normal Bluetooth range is around 33 feet / 10 meters (this may vary in practice due to wireless interference).
Usually around 30-40 feet. However, if both devices can access WiFi then they will remain paired.
