On my Series 2 with WatchOS 4, I'm having a strange problem with Snapchat notifications. When I initially receive a notification, the Snapchat icon is replaced with the default app icon.
However, it looks normal in the notification center.
I've already done a hard reset on both my watch and my phone. Is anyone else having this problem?

Some other users have reported experiencing the same issue with Snapchat notifications.
If updating to the latest version of the app (released on 23 September, with bug fixes) does not resolve the issue, then you may wish to let the developer know about the issue affecting their app:

For future reference, note that Apple advises that you should not force restart either your Apple Watch or your iPhone unless that device is unresponsive and cannot be restarted normally.

It has since become apparent that many other users are experiencing the same issue with various apps.
One user has reported that unpairing and re-pairing their Apple Watch resolved the issue:

I am having this exact same issue and is ******* me off. I have an Apple Watch Series 3 with Watch OS 4. When I first received the watch it was working fine it just suddenly stopped working. Snapchat was updated on 30th of September and problem still persists.
Apple advises that the issue of app icons not appearing in notifications on Apple Watch is addressed under iOS 11.1, released today.
watchOS 4.1 has also been released.

This isn't nearly sufficient an answer, although we appreciate your help. This is happening with so many apps that this is not a specific app problem. Either Apple has made an error, or they've changed something that developers aren't ready for, which is still an Apple error.
Apple needs to push an update to fix this in addition to their other outstanding issues before they proceed to create new features.
Any updates?

Same issue here occurring with multiple apps (IFTTT, Twitter, etc.). Running iOS 11.0.2, watchOS 4.0, Apple Watch Series 2.
Same problem on my Series 2. Seems to be with all non-apple apps. Drives me crazy. Hope they release an update soon.
