how do you turn off shuffle in ios11?

I had the very same issue. I noticed that there are two shuffle-icons:

One can be found above the title list of an album or playlist, and the

other one when listening to a title, scrolling down right below the

volume bar.

Now:

The album/playlist "shuffle"-icon when tapped causes a random

title to be selected.

To deactivate the shuffle mode of an album, use the one below the volume

bar, right next to the "repeat"-icon. Indeed this shuffle-icon will change color

therefore indicating whether it is activated or not.

In the music app tap the song that is playing to show the now playing view then swipe up the screen to reveal the shuffle and repeat controls.

As said above, tell Siri, ”Turn shuffle off.”

Work perfectly here. The impact of shuffle is always when the next song plays so I'm not sure how it "works until". 😕

See Play, repeat, and shuffle music - Apple Support. If I arrange the now playing screen so I can see the state of the shuffle control I can confirm that it responds to Siri requests to turn it on or off, and that playback is either shuffled or in sequence accordingly.

Thank you Intairnet, your reply is the only helpful reply. The official Apple document even fails to address this issue of how to turn off the shuffle function.

Thank you, Apple, for managing to absolutely screw up your own products. Wow, how far we’ve come where even Apple do not recognize the garbage they're now putting out.

Oh my how not intuitive this is. Not even a small icon or ANY way showing that I can scroll this up (I mean scroll up is reserved for system controls!).

The UX designer screwed this up completely. He MUST be fired!
