This is the biggest case of "It's not a bug it's a feature" that I've ever seen. Where can I file a bug against Apple to actually be able to quickly toggle my radios again?

Anyhow this feature is annoying and wrong. A toggle for Wifi or Bluetooth on/off should be that and not some kind of limited deactivation!

Nonsense. They did it because it makes a lot of sense.
There is nothing stopping you from turning off BT, WiFi, cellular data or your entire phone (really the only way to prevent the government, the only entity really likely to be tracking you, from doing so).

I would think that these paranoid individuals would be much more concerned about their cell signals. The maximum distance for Bluetooth and WiFi signals is insignificant compared to cell signals.

Absolutely! You should permanently turn off cellular to protect yourself.
Did that stop people from hacking you via the wifi network?
