I ordered an iPhone 8 which I should be receiving today but want to confirm why the UPS notifications say it originated in China? I've read some articles online that have warned people about fake iPhone's being shipped from China.

That's where they are made. It is normal for an iPhone ordered from Apple to be shipped directly from China.
Hi, this is my first IPhone ever, and I ordered it from apple store to be shipped to NJ, US. Will I have to pay taxes or customs when i get it in the United States. (beside the local tax I have already paid while ordering).

No, you pay taxes only based on where you purchased and those taxes would have been included in your invoice. You are not importing anything into the USA, Apple Inc. is.
