Is there any way to block just one website without blocking anything else? No minors use my phone so I have no need to block adult material. There’s just one website I waste too much time on that I want to block.

Settings>general>restrictions>websites>never allow a website
You can set Restrictions by limiting adult content and then you have an option to never allow specific sites. However, the only way for it to be truly effective is if you're not the one that has the restrictions passcode. It only takes a few seconds to get into the restrictions and disable the block.
So I couldn't find a way to do this in my iPhone settings without restricting all adult content, so I ended up getting the Zero Willpower app to block only specific websites.
This setting will only work if you set to Limit Adult Content first
