I am about to purchase a new iPod touch for my daughter and require a suitable protective case (and screen protector) but don't see any options for either in the apple store.
Can you please confirm for me which cases/screen protectors are compatible with the iPod touch? Ideally I am after a clear case.

That latest iPod Touch (and for the benefit of anyone reading this in 2022, that's 24th September 2017) is known as a 6th generation iPod Touch. If you do an internet search (Google if you like) for case for 6th generation iPod Touch, you should find something. The 5th generation cases also fit the latest one but ill have an extra (but hardly noticeable) hole in the lower back for the "loop button". In the picture below, you can see the loop attached to the back of the 5th generation Touch.
I recently purchased two 5th generation cases for my 6th generation Touch, one a wrap-round book type case that offers front screen protection and the other a three-piece clip-on without front protection. They're both a perfect fit.
