Hi

Not currently, via the built-in Workout app.

When recording workouts via the Workout app, for the most accurate tracking of results, be sure to choose the activity type that most closely matches your workout. This enables your watch to use the most appropriate sensors and data sources when estimating results, including using tailored calorie calculations for certain activities.

To record workouts that are neither included within nor sufficiently similar to those in the main list - including for cross-country skiing - choose "Other" as the activity type.

This credits one minute of Exercise for each full minute of the workout and Active Calories (Move goal) at a rate equivalent to a brisk walk or based on data from the heart rate sensor, whichever is higher.

However, neither distance nor a route map are recorded under this workout type.

When ending an Other workout, tap the option to "Name Workout" to label the workout from a range of activity types, which include Cross-Country Skiing.

If you would like to submit a feature request to Apple in respect of cross-country skiing being added as a main activity type, with distance tracking included, then you can do so here:
