Go to Settings>General>Keyboard>Keyboards>Add New Keyboard and select "Emoji". Once done, you'll see a globe to the left of the space bar. Tap on it to change keyboards.

If you only have two keyboards installed and one of them is Emoji, you'll see the "emoji" button when using the other keyboard. Once you have more than two keyboards installed, it changes to a globe.
Check
Settings > General > Keyboard > Keyboards > Add New Keyboard... > select Emoji
I'm also using a plus sized phone. But, before that I had a 6. It worked the same way there as my phone does now.
I'm very happy about the new keyboard as I was always hitting the undo key on the lower left of the old one. However, I recognize that different people have different tastes. Other people have recommended the GBoard keyboard as one that restores many of the features of the previous keyboard.

I did this, but didn't there used to be a dedicated emoji button visible without having to switch to the emoji keyboard? I know it's only been a few days since the update, but wasn't that how it worked before? The Gboard keyboard has one...
A few days old I know but wanted to comment. Previous to iOS 11 I had the standard keyboard, emoji and Gboard installed and did have the "dedicated" emoji button OP was referring to. Post iOS 11 I only have the globe as well so it does seem to be a change. It may have (previously) been there because I have a 6S Plus. IDK but was searching for an answer to this as well. The point I was making is that I had three keyboards installed and previous to iOS 11 I still had the dedicated emoji button. After the update the emoji button is gone so it appears this is a change.

I have never observed that behavior on my phone. I have always seen the globe if I add a third keyboard, the emoji icon if I have only two. I don't know why yours would have been different.
As previously surmised it may be because mine is a "plus" model. I haven't been able to confirm that suspicion.
I do miss the old button but as major calamities go this isn't one. It's kind of a shame as you can see there's a lot of wasted space on the 6S Plus in landscape.
