The option doesn't show up as available, either on the phone or connected to iTunes. I was sure it said the iPhone 5 was compatible with this version.

iOS 11 is not available for the iPhone 5.
The iPhone 5S is. The iPhone 5 and 5C aren’t.

It,s only iPhone 5s & 6 6s 7 8 can be updated to ios 11
Upgrade phone when you can.
