How can I access documents saved to /Library/Mobile Documents/com-apple-CloudDocs/ ?

Go to Finder and select your user/home folder. With that Finder window as the front window, either select Finder/View/Show View options or go command - J. When the View options opens, check ’Show Library Folder’. That should make your user library folder visible in your user/home folder. Select Library/Mobile Documents.

The com-apple-CloudDocs folder is iCloud Drive, not the Documents folder on iCloud Drive, Alice.
In the iCloud Section of the sidebar, click iCloud Drive, not "Documents". Search for a folder with a name starting with "Ni" as shown in your first screenshot.
To open com-apple-CloudDocs directly, you could also launch the Terminal and then copy this command into the Terminal and hit return:
open ~/Library/Mobile\ Documents/com~apple~CloudDocs
To see a list of all files and folders there type this into the Terminal:
ls ~/Library/Mobile\ Documents/com~apple~CloudDocs
I have done all of the above and I still cannot find the documents.

Please ignore the above, I have worked out how to get my user there.
When I go to the folder 'Mobile document' it takes me straight to 'iCloud Drive'. When I then click on the document folder from there it doesn't have the required documents I want?
