Series 3 with an iPhone 5
I recently received an Apple Watch series 3 but have noticed that to use WatchOS 4 I have to upgrade my phone to iOS 11, which my phone cannot run. I was wondering is it possible to have the watch itself downgraded?

No, I'm afraid that is not possible.
Apple Watch Series 3 (GPS) requires an iPhone 5s or newer with iOS 11.x or newer.
Apple Watch Series 3 (GPS + Cellular) requires an iPhone 6 or newer with iOS 11.x or newer.
