apple watch activates verizon service but says no sim

So I activated my apple watch on Verizon today and I now am being billed/credited for the trial period. However, my watch won't connect. It says "no sim" and "no plan" in various places. On the watch app on my iPhone, the verizon plan is listed, but is listed as "not active"

I've seen a ton of messages on the Verizon communities, and none of the advice given there seems to have panned out. Several restarts, resets, et cetera, but to no avail.

Verizon knows about my watch, has the pertinent information, but the watch will not work untethered to transmit voice or data.

Anybody have a solution that doesn't require me to spend 3 hrs on the phone with Verizon (that's what the complaints on the community there warn)

User uploaded fileIt took them several hours for them to fully understand that the pairing process in the Apple Watch mobile application did not work. It would just produce a white screen. I inevitably got to the highest level of AT&T technical support with whom I was on the phone for over two hours. He really went above and beyond trying to get this thing to work. He noticed that all those times that I kept retrying to activate the cellular plan through the Apple Watch application that it generated a phone number each time. At some point I had over ten phone numbers assigned to my account. After he deleted all those numbers effectively wiping the slate clean we tried a manual process. We went through the process of passing my IMEI and my EID over the phone which was enough to get a number assigned however when it came down to actual activation the ICCID kept returning 'No Sim' both on his side (through the network) and on my actual device. I am assuming he was able to reach the device through the network using my IMEI. After two hours on the phone he decided that there is nothing else he can do. He ordered me a new Apple Watch from their AT&T distributor. He tricked me into believing that he already had them in stock but when I got my delivery notification it said it won't ship until the first week of November. He originally told me I would get it in a few days. There is a phone number associated with the new Apple Watch already however I am not fully convinced that it will work because I had a phone number associated with my current Apple Watch but it could not be activated due to the eSIM issue.
