Since the update with MacOs High Sierra, the Notes app lag on my two laptop. (MacBook Pro mi-2015 and and 2017)
There’s a lag while typing, deleting a word or a sentence, using the backspace key, putting content in bold, almost everything.
It makes it quite difficult to use. Anyone having this issue? Or a way to resolve it?
I deleted com.apple.Notes/Container.plist with no result.

I tried the usual. disconnect from iCloud and reconnect. No improvement.
so after studying these threads some more I:
This appears to solve at least for now. I have turned 'smart lists' back on because that is 99% of my outlining. I will try this for a few days.
I conclude this is related to smart paste /smart quotes etc.
I will try this until the next update.

It's a pretty common issue. It appears to be something with trying to update high quantity of words in notes while trying to be a live update in the cloud. Not exactly sure. I can reproduce it but some that have a lot of words work fine and others don't.
I have this problem as well. My Notes collection has about 2000 notes, many of which have lists and images. The performance lag is a huge issue, making the application nearly unusable for me.
The "Apple Recommended" work-around to disable substitutions did not work for me. Maybe I didn't understand what to do. I selected "Substitutions" under the "Edit" menu and unchecked all of the options.
I wonder if there is some other issue in your situation. Do you have an unusually high graphic content in your notes. Or do you keep your notes all in one large note?

The lag in editing etc. in Notes is resolved for me under macOS 10.13.1. Hooray! Thanks, Apple (I posted the bug as feedback to High Sierra).
It worked perfectly on Sierra, and became a pain with High Sierra
I have the same issue under High Sierra, and confirm it wasn't happening in Sierra or earlier. And indeed it makes using the Notes app a frustrating business. The additions all sounded so good too!

Well, it worked for a while.. but after some updates, new Notes..the bad behaviors came back !
So it seems like I will need to dig some more... Anyone got to the root cause of this ???
Same here.
This has gotten bad. It's hard to edit on notes and it doesn't matter whether you care connected to the internet or not.
So far, my best "patch" for this is to quit Notes (CMD - Q) and restart.
I made a clean install as a last hope solution. Sadly, no effect. At first, it seemed to work... but the issues came back. ¯\_(ツ)_/¯
