I can appreciate why these edits might concern you, so let me try to clear things up. What you're experiencing is actually expected behavior; the elongated hyphen you're seeing is a punctuation known as the em dash. Since there's no dedicated button on the keyboard for it, through the use of keyboard shortcuts, entering two consecutive hyphens will automatically create it.
If this is something you'd rather avoid moving forward, you can always disable it be heading to Settings > General > Keyboards and just disable the Smart Punctuation option. Just be aware, disabling this feature will disable all keyboard shortcuts that relate to punctuation.
