When I upgraded to iTunes 12.7 all of my movies when I switch to full screen will turn to a green hue, I tried restarting, changing the playback quality from best to good and nothing works. I do not have any third party plug-ins so safe mode wasn't necessary.

I have this issue as well, also on a Mac mini, in both iTunes and QuickTime: as soon as the on-screen controls disappear, the colors blow out. It started happening immediately after the upgrade to High Sierra.
One additional data point: if I use Screen Sharing on another Mac to connect to the Mac mini, the colors return to normal. It's as if Screen Sharing keeps the screen active in the same way that moving the mouse does.
Changing ColorSync profiles does not help. Turning off hardware acceleration or running in safe mode might help, but there is no way to do that in recent versions of QuickTime.
It does not happen in VLC or any web browser.
I've posted a new question with a more descriptive title and links to all of the related questions I found. Hopefully we can consolidate and get more attention on this.
I did some more digging and found that my screen turns green when I play my movies in Quicktime 10.4 also but not in Quicktime Pro 7.6.6. It also doesn't when I use the DVD/CD.
Same problem here. Strangely enough it only appeared after I connected a new monitor after my old one pooped out
