When using my Watch to send a text message to a contact who does not have iMessage my Watch will give me a message saying “Unsent message. This message to ___ didn’t go through” and the text thread only shows a string of undelivered messages.
But when I look on my iPhone it is clear the message did go through and I see both sides of the convo.

It may help to follow the steps here, under "Get help if you can't send or receive messages", including turning iMessage off and on again and, if necessary, restarting and/or re-pairing your devices:
