Text message from Apple Watch “unsent”

When using my Watch to send a text message to a contact who does not have iMessage my Watch will give me a message saying “Unsent message. This message to ___ didn’t go through” and the text thread only shows a string of undelivered messages.

But when I look on my iPhone it is clear the message did go through and I see both sides of the convo.
