After installing the new ios11 update all of my incoming and outgoing text messages to other iPhone users are being duplicated on my son’s device which is synced to my account. How do I stop this from happening? It’s leading to some pretty awkward conversations.

Your son needs his own Apple ID and then you can set up Family Sharing to give him access to your store purchases.
In the meantime, on your iPhone:
Settings > Messages > turn off Text Message Forwarding.
In a lot of cases I'd agree with you, but if I had a son living under my roof, if he had his own Apple ID, I'd never be able to get into his phone. As a parent, I'd want my child to be on my account so I can could check things once in a while.
On your phone go to Settings > Messages > Send and Receive
Uncheck his number and/or email address
You can also in the same setting check Text Message Forwarding and make sure his device is not on
