I only want to set Safari to accept all cookies so I can get back into WSOP in Facebook. Once I have the cookie, then I change to accept cookies from sites I visit. That is no longer an option. How do I do it now?

According to Apple, you don't need that option any longer : they take the view that leaving all cookies enabled, and allowing Intelligent Tracking Prevention to remove undesirable ones, is a better way.

Send Apple feedback. They won't answer, but at least will know there is a problem or a suggestion for change. If enough people send feedback, it may get the problem/suggested change solved sooner.
Using the older version of Mac , in safari preferences > can select in cookies and website data as allow from current website only ( in your question you preferred Facebook website ) .
