What are the features I can access, and what are the advantages of connecting my iPhone to my iMac via bluetooth? Am I missing anything by not connecting via bluetooth?

It allows you to use the iMac as a speaker phone, and to make calls from Safari or your contacts list. It also allows you to send texts to non-iphone users. Hope that's helpful. Comes under the general subject title of hand-off and continuity
You cannot pair an iPhone to a Mac with Bluetooth.
Bluetooth needed for example: AirDrop

Whilst AirDrop uses Bluetooth, your iPhone and iMac don't need to be paired under preferences for it to work.

That's correct.
So is there any advantage to pairing an iphone to an iMac via Bluetooth?
third party apps could rely on the PAN Bluetooth profile which could require a pair
other then that I can't think of any don't believe mine are paired
I think you may want to re check that.

Should have added it works through iphone and imac being linked through icloud, not bluetooth
