I am trying to edit the category of a fantasy romance from GAY to Fantasy, Werewolf and there doesn’t seem to be a way to do that. Having a catagory or cat agony as spell check would like would be about as useful as the category English since most of my reading is “GAY” and in English. Stupid categorie!

AFAIK, you can’t edit metatags on iDevices. You can do it in iBooks app on your Mac by switching to the List view.
Just note that iBooks is very finicky when it comes to replacing modified files. If the change you make on Mac is not reflected on your device, delete the book, then sync it back again. The basic idea being that you want to force iBooks on your device to overwrite the old file.
