Are you talking about the voice that Siri speaks with? If so, go to Settings > Siri & Search > Siri Voice.
Or are you talking about setting up "Hey Siri" to respond to your voice? If so, go to Settings > Siri & Search, turn off "Listen for 'Hey Siri,'" and then turn it back on.
