This started happening to me suddenly this morning. I have no idea why but this is my second attempt at a reply because of the problem. I upgraded my 7 to iOS 11.2 yesterday morning.
It is driving me nuts!!!!!!!

Mine just started to do this. Have not found a solution yet. Just randomly locks after about 30 seconds regardless of what app I’m using. My clock will not open propearly also.
I just did and update to 11.2 and it resolved the issue of randomly locking.
I had the same problem. It's a bug. Temporarily set your date and time back (to December 1 for example) and install the 11.2 update. It should solve your problem. (It worked for me).
