How can I completely get rid of an iCloud account that was forced on me in 11.0.3?

After updating to iOS 11.0.3 on my iPhone 6, it seems I'm being forced to do two things:

Change my Apple ID, since the account I created with it over 10 years ago no longer exists.

Sign into iCloud.

The first was absolutely stupid because it required me to set up a new account because it wouldn't use my 'rescue' account. I get that they are trying to make things more secure, but seriously.... I updated the phone; I did not restore it or get a new phone, so it should go off my existing account.

Second, Settings keeps trying to get me to sign into my iPhone to set up iCloud and App Store 'and more...'

I don't even know what the 'and more...' is and I certainly do NOT want iCloud. I've gone this far with out it and there is no one that is going to convince me that it is a good thing for my particular usage. I DO, however, want to be able to login to the App store automatically and just supply my password every time I make a purchase, but it apparently requires you to sign up for iCloud first and there is no SKIP or NOT NOW option.

Right now, it is not showing up in my Settings, which I'm assuming means it's not activated, but I want to make sure there is absolutely no iCloud account in my username(s) or connected to my phone or iTunes. I also think it's pretty crappy to make someone go through and account change (where you use your same password, by the way), and then force them through configurations of items that you do not want. Two factor authentication is great, and I want that, but I don't want the rest of the CRAP that Apple has put in this update. It might be good for iPhone 7 and iPhone 8 and heavy data users, but I am not a heavy data user, nor do I have an iPhone 7 or 8.

This is a HUGE mistake on Apple's part. They should offer these things SEPARATELY and not give you a 'badge' or other notification of unfinished configuration when you have it configured the way you want it.

They also need to be MUCH MORE CLEAR when forcing someone to change their Apple ID that they will be ONLY changing the ID and NOT the password. It should also tell you in ADVANCE that you cannot use your rescue e-mail or at least list the e-mail as one you can't use. This posting should also have an option for Windows 7 or 10, since Windows XP is no longer supported.

Now, how do I get rid of iCloud once and for all?

Actually, if that is true, then they need to remove it from the set up and set it up as a different configuration, but that is not the way it is. If I go to settings, it tells me I have to 'sign in'. When you start the sign in process, the first thing it tries to do is sign you up for an iCloud account and there is no way to SKIP it. It's likely I don't have one set up, since it doesn't show under Settings and I never complete the setup, but this is a REALLY HORRIBLE way to set up features on a phone. Each should be separate and ALL should have a SKIP option.
