HP stopped providing drivers for this printer at OS X 10.7 (sometime in 2011) on their site. However, there remains driver support for the HP Color LaserJet 2600n in the new HP Printer Drivers v5.1 for OS X that you can download from Apple, if it didn't appear in your Mac App Store Updates.
Install this driver package, reboot your Mac, and with the printer powered on, visit System Preferences : Printers & Scanners. Either add a new printer, or if it previously existed, right-click on the printer icon, and Reset printing system. Choose the appropriate driver, and you should be good to go.

I should have mentioned earlier that I had already checked Gutenprint (aka GIMP Print) for this specific printer, and it wasn't supported. It is not available in the HPIJS for Mac OS X drivers either. The latter seems to have stopped development at Mountain Lion, and the OP appears to be on El Capitan.
This particular printer was dated when I used it at work ten years ago.
