We use iPod touch as a scanner at work. The software (app) that's available from our employer will NOT work with the new iOS update. Someone at work accidently updated 2 iPods with the new software. The iPods' are not backed up; is their a way to downgrade the software? Will going through a factory reset give me the original operating system on the iPod?😕😕

Apple does not support downgrading. There is no way to do it. Also, Apple is no longer signing older iOS, so even if you were able to get a copy of the ipsw file, you would not be able to get it verified or activated.
Did you go from iOS 10 to 11? If so, you can no longer go back to 10.

You're welcome. I suggest in the future to have the boss set Restrictions on the iPod to prevent changes such as these.
