iCloud drive - sub folder exclusion

Can I exclude folders from being uploaded to iCloud drive?

In other words:

By default, iCloud uploads all files and folders in DOCUMENTS.

Is it possible to exclude one or more files or sub-folders?

iMac (27-inch, Late 2012), Mac OS X (10.7.5)

Yes - you can rename the file or folder with either a .tmp or .nosync extension at the end. I'd recommend .nosync, since the OS will view .tmp as a temp file, and utilities which allow the deletion of temp files or automated cleanup might be an issue.
