Why did IOS 11 screw up my IPhone 5s

I have an IPhone 5s and ever since the IOS 11 upgrade, all 3 of them, I have to tap almost everything I do multiple times for it to go back to mail, messages or most things I tap. Is there a way to uninstall this IOS 11, it *****!
