Draft Print Settings on Epson Workforce Printer/AirPrint

Hi, I just made the switch from PC to Mac and I use a Epson Workforce WF-2540 to print shipping labels and packing slips over Wifi. I was previously able to configure the printer on my PC to print in draft mode to save on ink but I don't see this option available anywhere on my Mac, only Black and White and it's definitely still higher quality. I'm guessing it is because the AirPrint options are simplified, but is there some sort of workaround other than plugging my printer in via USB (not really an option with my workspace configuration)? I am on Mac OS Sierra 10.12.6 and attached below are screenshots of the options I see. TIA!

Unfortunately I don't see any checkbox or setting like this and I'm such an Mac novice, I don't know where to look beyond where I already have... opening the printer in the System Preferences area gets me very few options as well (see screenshots).

This is when I click "Options and Supplies":

This is the Presets menu, accessed through attempting to print on another app (Mail). I can't select any options on the right side, all just say Auto Select.

AirPrint should not be confused with Wi-Fi access from your Mac. AirPrint is used to support iPhones and devices that are not compex enough to use real Print Drivers.

"Full-featured" (non-AirPrint) drivers appear to be available and included in MacOS for this Printer. If you set it up from your Mac, there is no need to specify AirPrint.

wait -- that background -- Are you trying to print from inside an ADOBE .app?

ADOBE thinks they know better than anybody how to print. So they shut off all the Printer Driver features and use their own, which MUST better, because they are ADOBE.

There may be a checkbox or setting to access the "native printer driver", which could get you access to more options.

Success! I didn't remember seeing anything about AirPrint in particular when I added the printer initially, but out of curiosity I deleted the printer and added it again... this time, I saw in the drop-down that AirPrint was the default setting/driver when setting the printer up, but I was able to select the WF-2540 drivers and then set up the printer that way. When I tried printing, I was able to see Fast Economy, Economy, etc for quality settings. Thank you!!
