Do any overhead projectors offer native Airplay support or any option for device screen mirroring?
Currently it looks like I must either use a Lightning to VGA / HDMI dongle for a corded connection or connect an Apple TV to my projector.

You would need the Apple TV for airplay support, as far as other options it's unlikely but you could check with the manufacturer.
As far as I'm aware Apple only license Airplay for audio to 3rd party manufacturers.
This is an example where it would be useful, but I guess AppleTv is quite small if you needed to locate close to the projector, or alternatively close to the HDMI feed to the projector if there is one.
