It syncs because you are using the same Apple Id on both phones. There are several things you can try in order to solve the issue.

You can:

1. Change "My info" into settings > contacts. Try creating a new contact with a different e-mail address.

2. Disable the unwanted phone on "Call on other devices" (settings > phone > call on other devices > and uncheck the device you don't want to sync).

3. Create or use a different Apple ID.

Yes it it possible, although not recommend it. You can remove the Apple ID and iCloud from settings. This of course will affect iMessage, FaceTime (If you want to use them), Safari Bookmarks, Books, Find my iPhone, and more.

Are you planning to use the iPhone 5 for only music?, what iOS version has installed?

Easiest thing to do in that case, is to go to Settings->Phone->Calls on other Devices and turn it off on each iPhone. Or turn each iPhone off on the other one.

Otherwise logging out of iCloud will also stop this.

Stop using the same Apple ID.
