I'm having a hard time watching netflix on my iPad Pro 12.9 due to the fact that all movies are insanely dark. Sometimes I can't even see the face of the actors. Someone else having this problem?

One more thing the new iPad Pro is suppose to support HDR content.
Even by doing that still looks horrible.
The new iPad Pro and iOS 11 have a new white point adjustment feature in the Settings app.
You may have adjust that white point setting.
Also, make sure the overall screen brightness is set accordingly.

Did you try the different white point settings?
Also, try temporarily disabling Night Shift mode.
iOS 11 made HDR possible on the new iPad pro.

I've tried all that and it hasn't worked. I've started to realize that this problem is happening often (maybe only) with HDR movies
What about just simply watching non-HDR Netflix content, then.
iDevices cannot display High Dynamic Range (HDR) videos.
Most iPads can only display 720p or 1080p videos.
