As far as I know the 11.1.1 update should have corrected it. I'm running 11.1.1 and don't have the problem. But then it wasn't present before the update either.

I typed my last reply, and this one too. As soon as I type the I now, have to make the choice to use the first person I, which is dumb. The iPhone was smart enough to choose it for me before, unlike my recovering shoulder surgery, that keeps hitting the return key prematurely! I was (!!!!) just hoping there was a fix for this I that I’ve been typing for over 50 years without correcting! But if not, eventually the new habit will form, :(

Do you have a problem when YOU type the "I"? If it is just in messages you are receiving, the problem is caused by the sender not having updated their device and has nothing to do with your end.
Have you installed iOS 11.1.1? This is a known issue that should have been fixed with that update.

What happens if you turn off predictive text, but leave autocorrect on?
(Also double check that it says 11.1.1 in the Settings, sometimes installs fail for some reason)
