Fill a "new contact form" issue

Everytime I want to create a new Contact, at the number field I get by default "Fax Home" and I wish it could be changed to "Mobile Number" -

How do I do that?

Is there any way to rearange the fields? Like to change the "adress filed" just after "Telephone"?

iPhone SE, iOS 10.3.3

That is normal and I am not aware of anyway to change this.
