getting weird symbols in iMessage
After the lates MacOS update, I get this (A and horizontal bars icon) instead of the character "I" (capital i) in iMessages on my iMac.

That has been fixed with the iOS 11.1.1 update: If you type the letter “i” and it autocorrects to an “A” with a symbol - Apple Support and iOS 11.1.1 Update Available to Download, Fixes Question Mark Bug
This is the first I've read about it affecting Macs. What latest macOS update are your referring to? Try downloading and applying this one again: macOS High Sierra 10.13.1 update

That's probably it. The source texts are coming from the kids in Europe and they turned off their auto-updates.
I just updated to 10.13.1, but I'll do it again to see if it matters.

If in a received message, it has nothing to do with your machine, it just means the sender needs to update their iOS device.
