Watch Series3/Iphone8+/Air Pods/Toyota Prius

Help!! I have an Apple Watch series 3 with cellular, an iPhone 8 +, Air Pods, and a 2014 Toyota Prius. I also drive part-time for Uber. I have spent hours trying to play music from my Watch on the Prius system ( this works wonderfully when the phone is not connected) while using the Uber app on iPhone and using Air Pods for directions from the phone. I seem to get it working and all of a sudden the music will start playing on Air Pods and not car or directions come out of Prius system speakers. Is there a way to get music from watch on car speakers, Uber app directions on Air Pods and keep these set up for the long hall? Thanks.

Whilst some users have reported success with pairing Apple Watch with certain car Bluetooth systems, Apple advises that iPhone, iPad and iPod touch are the only devices that are designed for use with car audio systems.

Apple Watch can be paired with compatible Bluetooth headphones and Bluetooth speakers, but it is not designed to be paired with car audio systems:
