All my notes and contacts are shared with my wife’s phone. How do we separate notes and conacts
I have an IPhone 7 and my wife has an IPhone 6. All of our notes and contacts are shared. How do we unshare our contacts and notes?

You should each be using your own Apple ID. If you are both using the same Apple ID and syncing to iCloud, there is no way to keep them separate. You can each have your own ID and still share some things by using Family Sharing. See: Family Sharing - Apple Support
