They used to have multiple sizes to choose from but looks like only 1 now? Am I missing something?
Yes. The only size available in Photos is 13" x 10". iPhoto has only had one calendar size available, also 13" x 10".
You might be thinking of photo books. Early iPhoto has several book sizes, 3.5 x 2.6, 8 x 6 and 11 x 8.5. iPhoto 9.6.1 has only 2; L (11 x 8.5) and XL (13 x 10).
You might want to look at the offerings from PrestoPhoto. They can prints books and calendars from the PDF file generated by iPhoto or Photos. Several users have purchased books from them and were very pleased with what they got. PrestoPhotos also offer discounts.
