Where are the ease in/out controls for the fade in/out behaviour?
There's nothing in the behaviour's controls and nothing in the keyframe editor.
Any pointers in the right direction would be much appreciated.

Behaviors simplify what you'd normally do with keyframes, but they don't offer every single parameter possible related to the type of movement they are doing. To quote the user manual, "By design, behaviors are most useful for creating generalized, ongoing motion effects."
You may have to use keyframes, which can set interpolation. Fortunately, if you've used a Behavior already, and want to convert to keyframes, you can.

It's a real shame that basic controls like this don't work with behaviours because behaviours are awesome (and why I avoid After Effects where possible).

Behaviors are there to simplify things. If they contained all the possible parameters, they'd just be a massive keyframe mess. Note that the Fade behavior is in a group titled "Basic Motion". Basic implies no frills.
The user manual I linked to shows how once you have a behavior set, you can get deeper into its functionality by selecting the behavior's layer, go to the Object menu, and choose the "Convert To Keyframes" function. Then you can control things like Ease In/Out very simply.
Couldn’t disagree more, there’s no need for all possible parameters, just one more slider and you’d have simple, powerful control without the nonsense.
It’s a shame simple behaviours are seen as too basic for power and simplicity, that’s the whole point of good software IMHO.
