I just got my iPhone8, but when I try redownloading my apps it’s asking me for a cc update, why am I being charged ? How do I know what I’m being charged for? And where do I cancel any subscriptions?

Just because you are asked to keep your credit card information updated does not mean you're being charged for anything. It means your ID needs to be correct and current.
