Healthkit Records Steps During Cycle Workout

I've noticed this question appears frequently in the forums over the years and, weirdly, there doesn't seem to be an answer.

I've been recording cycle workouts using both the Apple Watch Series 3 and the Garmin Edge 25 and uploading them into Apple Health - the problem is the same no matter which tracking device I use.

Apple Health will record thousands of steps (and presumably calories) as being taken during my cycle workout. This renders my steps and calories metrics as being pretty much meaningless for any day that I go cycling.

I don't understand why Apple Health doesn't have the sophistication to understand that it shouldn't track steps taken during a cycling workout. It wouldn't be so bad if I could manually delete the steps - but this is just not practical.

Surely, there must be a solution (or at least a workaround) for this.
