When the Calendar app has been removed from your iPhone, then it is also not available on your paired Apple Watch.
Follow the instructions here to add it back to both devices (adding it back to your iPhone automatically also adds it back to your Apple Watch):

I had to unsync my Apple Watch and now it not working right some of my app on it want open or it say to restore and when I do what it say to do it won’t let me Help
