How do I log into iCloud .com to restore the most resent backup without erasing all content?

Go to www.icloud.com (via a computer) > Settings > Advanced > choose what you wish to restore.
If you are wanting to restore a backup, all data created after the backup was made will be erased. There is no way around this.
