I am considering buying an 2017 iMac, but I was wondering how does go about changing from an i5 to an i7 core at a latter date?

You don't change at a later date.
The "Configurable to 4.2GHz quad-core intel Core i7" means you could have chosen that processor during purchase.
It does not mean it can be upgraded to that processor after purchasing. It cannot.
It means that you have to order it from the on-line store and wait for delivery.
