I have an older Mac that I have kept updated. I recently downloaded and installed the new OS High Sierra Update but it does not appear in the "About this Mac" menu status.
It still shows OS X (Version 10.11.6) El Capitan. My iMac is a 2007 model. With 1TB of internal storage and 4GB cache memory.

I went to my Apple icon in the top menu bar. Pressed Install Updates. It processed the update and restarted the computer automatically. When I logged into the desktop, I saw no difference in the visuals, so checked "About this Mac" and saw that it was still running the older operating system.
Your comment that my older version does not support High Sierra makes sense.
For those of us not in need of a more powerful or newer model, will we eventually be unable to operate our macs with all the Updates?
I prefer not give out the serial number of my mac for security reasons.

I see a couple of Security Updates, Safari Updates and an Evernote update. It does say "No updates Available" but there is a free download button, which is what I pressed that started the download.
I can live without the update but wonder how long I should rely on this older version mac.

How did you install High Sierra exactly? Could you post your serial number? A 2007 iMac does not support High Sierra - only up to 10.11, which you're on - so what you're seeing makes sense.
Your Mac's software will run until a hardware component fails, so no worries there.
If you open App Store, what do you see under Updates: installed in the last 30 days?
