If I want to send a message to an iphone that is not connected to internet will it still reach the destinatary when I send it it after his phone is connected? How do I change an iMessage to an sms without changing the general settings?

Maybe. It will depend on how long it is before the person reconnects their device. If it's a matter of a couple of hours, yes, probably. If it's more than a couple of days, possibly not. If it's important, send an email.
