A number of folks who have posted here claim that they are not having any issues; however, be aware that Microsoft does not support Office 2011 under macOS High Sierra. Microsoft does fully support Office 2016 or Office 365 with High Sierra.

It's been awhile since I installed Office 365 (basically Office 2016 in a subscription format) on my Mac which had Office 2011. I believe I had the option to retain 2011 and elected to not do so. Regardless, there wasn't any issues with any existing documents during the upgrade.
You may want to visit the Microsoft Office Support site for more "official" details on the upgrade process.
Microsoft claims that Office 2011 for Mac and Office 2016 for Mac can co-exist. All Office 2016 for Mac applications store their fonts internally. You will need to update Office 2016 for Mac past 15.35 for compatibility with High Sierra. Version 15.40 is out as of this post date.
Do I need to uninstall my 2011 version, if so before or after installing 2016?
Thank you, I’ll do that.
