Using iOS 11 on iPhone 6. Also when I try to copy and paste the message it shows it correctly displayed as “I don’t like that” from the picture below.
Try a restart and/or forced restart:

update to iOS 11.1.1 if you have not done so already.
Just updated still no fix

When I receive a message that has “I” in it, it is replaced with an “A” followed by a question mark inside a box
