I installed a new SSd because my current hard drive was showing signs of wear. I would like to use the SSd as my startup and the old drive for data. How can I do this?

You can also clone the existing drive to the new drive using software like the free SuperDuper app or the paid Carbon Copy Cloner.
SuperDuper does not clone the Recovery partition unless the source drive is the new Apple File System (introduced in High Sierra) which is not your case since it is for SSDs only)
