How do you update Apple Watch from Watch iOS 1.1 and pair it with a new iPhone 7?

I currently have an Apple Watch (iOS 1.1) and have upgraded my iPhone to the iPhone 7. I have been experiencing problems updating the iOS on the Apple Watch and am unable to pair it with the new iPhone. The old iPhone which I paired with the Apple Watch is no longer with me.

Please offer help and instructions on what I should do to upgrade the Watch iOS, and pair it successfully with the iPhone 7.

Follow these steps:

As your old iPhone cannot be used, follow the instructions here (under "Erase your Apple Watch") to erase your Apple Watch manually (this is required before it can be paired to your iPhone 7):

Unpair your Apple Watch and iPhone - Apple Support

Update your iPhone 7 to the latest version of iOS 11.x, starting by making a backup:

Update the iOS on your iPhone, iPad, or iPod touch - Apple Support

Pair your Apple Watch to your iPhone 7 by following the instructions here - watchOS will be updated on your Apple Watch as part of the set up process:

Set up your Apple Watch - Apple Support
During set up, choose to Restore from Backup if offered the option for your Apple Watch.
